Ingredients
3/4 cup canned black beans rinsed
2/3 cup quinoa
1/4 cup hummus
1 tablespoon lime juice
1/4 medium avocado diced
3 tablespoons salsa
2 tablespoons chopped fresh coriander
Method
Cook quinoa according to the product instruction.
In a bowl, combine the cooked quinoa and beans.
In a small bowl, stir together the hummus and lime juice.
Thin the mixture with water to achieve your desired consistency.
Drizzle the hummus dressing over the beans and quinoa.
Top with sliced avocado, salsa and coriander.
Serving Suggestion
Serve with cracked pepper and some mayonnaise.
